Are all Shiloh Sharps barrels stamped with the case/brass size. Looking at a used one with just 45/70 stamped on the barrel.

Generally yes. My .45-70's are stamped "Calibre 45" and on a separate line "2-1/10".
But I don't know how the older ones are stamped. My Shiloh's are all Bryan era rifles.

This is a Shiloh Sharps. Supposedly made in Big Timber Montana.

I came here in 1990 and as far as I know, Shiloh has never had a 45-70 stamp. I would need to see a picture of the gun to tell you the story.

I have a couple C. Sharps, at least in my examples they don't utilize anything but caliber and case length.
