I have an early three stone kit. I take a steel with me when hunting which of course does not remove material but straightens up the edge with a burnish. Heading Salmon, cutting their fins and moose or caribou hair is the real test of knife steel sharpness and toughness or lack there of.
The sand and salt water in and on everything when dip netting is hard on knife blades as well. Carbon steel blades will almost rust while your looking at them in this environment.
