Annealing your brass

Someone clear this up for me real quick, I've seen two different ways to anneal brass and so a little confused, I always thought to soften metal you heated it then let it cool off slowly but I've seen guys annealing by heating the brass up then dropping it in water to cool off quick, wouldn't this harden the brass or because of the different properties of the metals that's how its done, I've also seen them heat it up then drop it in a dry pan to cool off slowly, so which is it? Thanks

It’s different for brass than it is steel. Once the brass hits a certain temp then it’s annealed. Doesn’t really matter much how it’s cooled. Both methods will anneal the brass just as long as you hit the 750ish mark
