Guess there must be some wild turkey legs out there that are good, as bobw seems to have experience with it. The Texas turkeys, at least South Central Texas, legs don't eat good. People throw them away, but then again the venison meat from that region is also "drier" for lack of a better word than deer meat I have harvested elsewhere.
