There is a difference

For the last 16 months I have had a freezer full of buffalo meat. Right now I'm down to about 75 pounds of hamburger. The meat is from two buffalo--a three year old bull and a three year old cow. You can definitely tell the difference. Shoot straight, rdnck.

I think any meat from a bull or buck, once they turn to maturity and start breading the meat gets strong just like a bore hog.
I will take a young button or young doe any day for the freezer.
