The first time I ever heard of this "technique" was on a hunt in Scotland. My "guide" employed the technique to make sure the meat was
all saleable in the market. The lower intestines were removed afield and the windpipe and foodpipe tied off but the chest cavity unopened
until the deer was in the processing facility. As long as the hide was intact (hunters get only the antlers as a trophy) the carcass could be
sold whole adding income to the estate. Should you wish to have your animal caped for a shoulder mount you would be charged for 1/2 of the animal's
meat price as the hideless fore-quarters would be condemned for human consumption.
I always find it "fascinating" to watch someone else do the bloody work, especially an expert who does 100's of animals annually.
